Barbara AKA Triple B, supervisor

I’m Italian and have been working at Green Moustache for a couple of years now


Fun facts about me:

  1. I love long distance running and am attempting the Sydney marathon this year (2023) with Matt the boss

  2. I can touch my knees with my nose ;)

  3. I can speak four languages

My favourite dish on the menu is definitely our Vegan Salad, cause it’s nourishing, delicious and perfect for this time of year.
I think it goes very well with a Tommy’s Margarita (to be fair - what doesn’t?)


Gina aka Gina Ballerina - floor manager/marketing coordinator

I’m from Germany and been living here in Sydney since 5 years.

Fun facts about me: 

1) Nearly every person I’ve met for the first time thinks that I’m french because of my accent.

2) I have 4 different degrees, one Bachelors Degree in Social Science, one Diploma in Travel and Tourism Management, one Diploma in Marketing and Communication and one Diploma in Social Media Marketing.

3) I love travelling and have been to 7 different countries in 2022.

My favourite dish on the menu is the house-made Gnocchi - it’s my forever go-to, no matter which garnish.

My favourite beverages are a spicy Margarita or an Espresso Martini. Can never go wrong with these two. :) For special occasions or with oysters I do love a glass of bubbles, my favourite is the Louis Pommery English Sparkling.


Juliane AKA Jules, event manager

Fun facts:

1) I shaved my hair because someone told me not to

2) I can’t drink whisky or tequila because of a huge hangover no more margarita for me

3) If I could have any superpower I would like to eat whatever I want without getting weight (isn’t it our dream life for all of us?)

I really enjoy jigsaw puzzles (#nerd) and drinking

Fave dish: There is no better way to start a night out than with a dozen of fresh Sydney Rock Oysters served with our Ruby Grapefruit Champagne Mignonette.

Fave wine: Our Louis Pommery England Brut is my absolute fave. The wine maker applied the same traditional method he uses in champagne, just in England. The result is stunning.


Santiago AKA Santi, venue manager

Fun facts:

1) I never drink coffee, but I drink “mate”, which gives me the same affect. There is no day which goes by without me drinking it

2) I love swimming and running

3) I'm actually a civil engineer but I explored my passion for hospitality since I arrived in Australia in August 2018

I love to work at the Green Moustache because the staff here is a mix of my family and closest friends. It doesn’t really feel like going to work when I come here.

Favourite dish - Scotch fillet: It’s hard for me to decide between Gnocchi and the Scotch fillet, but I would always choose the steak, because I love a good piece of meat and along with the field mushroom, confit onions, red wine jus and foie gras butter it’s just the perfect dish.

Favourite Drink - it’s a hard one and depends on the situation. But I do love a good drop of red, a beer or an old fashioned to start or finish a good night..


Matt AKA Merbs, owner

Fave pastimes:

1) Surfboat rowing

2) Trail running

3) Drinking

Fav wine on the menu currently is Maxwell Ellen St Shiraz - Aussie Shiraz in General. I can also never go past a classic Coopers Red!

Fave dish on the menu is prawn and crab spaghetti/ gnocchi paired with a glass of Rockford Riesling, you’ll find me most lunchtimes in the bar with this combination!


Jake AKA Sven, beverage manager/sommelier

Fave pastimes:

1) Running

2) Tasting wine and visiting wineries

3) Brewing cider

Fave cocktail is the negroni, it’s the perfect pre-dinner cocktail - always a good way to start the evening! We’ve created an Australian take on the classic using all local ingredients which flies down

Fave dish is the eye fillet, hard to beat a good steak especially when paired with a delicious drop of red
