Soft and gooey perfectly baked brie is the ultimate wintery indulgence. Whether you're hosting a dinner party, celebrating a special occasion or simply staying in for a cozy night at home, this delicious recipe always goes down a treat. Below Head Chef Pete Fitzsimmons guides us in how to cook this seasonal dish perfectly.

 

Ingredients You'll Need:

  • 1 wheel of brie cheese: Opt for a quality brie that is ripe but not overly runny.

  • Olive tapenade: Make your own (pitted green olives sliced, mix of herbs, confit garlic, chilli, olive oil) or buy from the supermarket.

  • Crackers, sliced baguette or apple slices: For serving.

Instructions:

  1. Preheat the Oven: Start by preheating your oven to 200°C.

  2. Bake Until Golden: Place the brie on a baking sheet in the preheated oven and bake for 7 minutes.

  3. Serve and Enjoy: Remove from the oven and let it cool for a few minutes. Serve warm with crackers, sliced baguette or apple slices for dipping and the olive tapenade.

Tips for Success:

  • Choose quality ingredients: Use a good quality brie and condiments

  • Experiment with flavours: Feel free to customise your baked brie to suit your taste, try it with different jams, preserves or nuts

  • Timing is key: Keep an eye on your baked brie towards the end of baking to ensure the top doesn't burn
